canning BBQ

I cooked some BBQ the other day added my sauce and cooked about 1 more hr. it was tender and great, so i canned it for 75 min. and it was dry and tough, my question is since the BBQ was already cooked couldn't i just pressure cook it for say 20 min. Thanks
